Sausage Tortellini Soup

Ingredients

Fresh

  • 1 lb ground Italian sausage (mild or hot)

  • 1 small yellow onion

  • 3 Cloves garlic, minced

  • 1 tsp hot sauce

  • 1 Cup heavy cream

  • 2 Cup Kale

  • 2 Cup Refrigerated Tortellini

Pantry

  • 3 Tbsp Flour

  • 1 tsp Basil

  • 1/2 tsp Oregeno

  • 1 pinch Cayenne (optional)

  • 1/2 tsp Mustard powder

  • 1/4 tsp Pepper

  • 5 Cup Chicken broth

  • Salt to taste

  • 1 Pinch Red pepper flakes

Instructions

  1. Cook and crumble sausage and diced onion, drain grease, then add garlic and cook for 1 additional minute.

  2. Add flour and cook for 1-2 minutes

  3. Add basil, oregano, cayenne, hot sauce, mustard powder, salt, and pepper. Stir.

  4. Add chicken broth, scrape bottom of pan.

  5. Add cream, bring to a boil, then simmer.

  6. Add kale and tortellini and simmer 3-5 min.

  7. Serve with a pinch of red pepper flakes if desired.
