Mickey & Friends Cupcakes

It’s been a month since I’ve posted anything. 2017 has barely even started and I feel like I’ve failed at my non existent resolutions. I want to start off the year right however and set some sort of goal, and consistent posting is one of them.

For now though, this post is all about these adorable minimalist Mickey Mouse & Friends cupcakes!


Two very sweet boys are turning two and having a joint pancake breakfast birthday party this weekend. For their Mickey themed day I was asked to make cupcakes fitting to each character. We toyed around with different ideas, ultimately settling on this very sleek and clean design.

I absolutely love how they turned out!


The cake is vanilla while the buttercream was requested to be champagne again. I have a feeling this one will become one of my most requested flavors. It’s light and sweet, without being too sweet, and adds just the right amount of something extra to a vanilla cupcake.


I had so much fun designing and creating these, it’s hard to choose a favorite, but I really love how Goofy and Donald turned out! Oh and Pluto’s ears were a blast to create as well.


This is how these two helped with clean up afterwards. Jethro is doing great and is such a sweet puppy. As much as I think he is out of control and doesn’t listen, I am reminded when I see other pups his age who are out of control, that we got very lucky with our smart, happy boy. He started puppy training this week and it’s still early to tell, but he did great during the first session.


Other than raising a pup and making these cupcakes, we’ve been moving forward with more house plans. Joseph finished my beautiful floating shelf in the living room, now all that is needed is some wall art and I can finally reveal it. We picked out furniture for our family room, and will show that as the next phase of The Ultimate Room Makeover Challenge. It stalled for that reason only, I am picky about furniture, plus it is a huge purchase and we wanted to be sure. Now we just have to wait 6-8 weeks until it all arrives!

I also set out the new year wanting to be better organized. I wanted to get more organized with my blog (fail), my meal planning (it’s getting there), my house work (huge fail), and my personal life. I wanted a new planner to start my year off right. One of my favorite things in school was having a planner and spending hours each week setting up my schedule, setting goals, and writing down deadlines for the semester. It calmed me, made me feel prepared, and ultimately more productive. I was clearly able to see where my free time was, how I was spending my time, and where I was over booking. I am such a visual person that life seems to be slipping by without one. My only issue is that I am picky with my planners. Decent custom life planners cost a fortune, and just as much to create your own. Basic ones don’t have all the niche inserts I like/need, and I haven’t found an electronic substitute that makes me happy. I don’t know if I’ll ever be able to use an electronic calendar/organizer. Plus I feel like they fail at being user friendly and mainly are just a cluttered calendar that is a mess to flip through. So here we are, at the end of January and I feel as if I’ve waisted 3 weeks.

Anyone have any planner suggestions, or great DIY options? Everything I have found for DIY are too time consuming and cost too much to make it worth it. If I am missing something please let me know!

  • An actual full sized birthday cake for my birthday! I love doing full sized cakes and practicing, but an 8″ four layer cake is harder to get rid of than cupcakes.
